I had a load of left over chillies so rather than dry them out or them go to waste I decided to mix up some sweet chilli sauce. The chillies came straight from a plant I’ve had growing in the sitting room. Depending on how much you blend this and how long you reduce it for will determine if you get jam or sauce. I prefer sauce!
- 8 tomatoes, chopped.
- 2 cloves of garlic, minced.
- 1 diced onion.
- 225g caster sugar
- 100ml red wine vinegar
- 2 fresh chillies
- 75ml of water
- Boil all of the ingredients for about 20 minutes.
- Blitz with a hand blitzer if you have one. I used a blender meaning I got a finer sauce.
- Return to the heat. Watch and stir until you get the consistency you want.
